The newest addition to Wynwood’s dining scene comes with a tuna-cutting ceremony, a sake list worth studying, and the kind of playlist that makes it clear this is a place after a nightclub vibe.
SORA by Hotel Collection blends the Thai roots of chef Piyarat Potha Arreeratn with Miami’s flair for the theatrical. You may know Chef Bee from his long run at NaiYaRa or from earlier at Nobu.

At SORA, he’s back at the sushi counter with an omakase menu that shifts with the seasons and includes signature events like Caviar Wednesdays, sushi-making classes, and the occasional appearance of a “Foodgod’s tasting menu,” just in case you were wondering whether this is still, in fact, Miami.
“SORA is about offering an immersive culinary journey that honors my roots,” Arreeratn says. “Every dish tells a story.” Some of those stories come paired with wine-infused cocktails from a curated cellar or a pour of cold sake, meant to complement—not overshadow—the menu.
The space feels like a cross between a gallery and a music bar: dim lights, retail displays, and just enough tables to keep things feeling intimate. There’s also a patio out back, should the Miami breeze call your name. The room was designed with SORA’s other parent in mind—Hotel Collection, a brand better known for luxury candles and home goods but now dabbling in nightlife with the same obsession for detail.
In a neighborhood that doesn’t lack for sushi, SORA finds its lane by leaning hard into its vibe. It’s not just dinner. It’s dinner with a beat. And maybe a bit of caviar. Reservations are on Open Table.
