Novatore Cucina & Bar Brings Michelin-Star Pedigree to Wynwood

Italian restaurants are officially a trend in Wynwood, but this new spot seems worthy of attention if simply for the CVs of the chefs behind it.
Novatore Cucina & Bar arrives with a trio of chefs who have Michelin credentials, a passion for high-precision cooking, and an apparent disregard for cutting corners. The place is about fresh pasta, grilled seafood, and Roman classics tweaked just enough to make you rethink them.
Andrea Bernardi and Fernanda Fuentes-Cárdenas, the duo behind Tenerife’s Michelin-starred NUB, have teamed up with chef Marco Rama, whose last gig was at Italy’s Andreina, a Michelin-starred spot where the cacio e pepe gets finished over a grill because why not? Together, they’re serving up dishes that feel like they belong in Miami but wouldn’t be out of place on a white-tablecloth table in Rome.
On the menu, the gnocco is stuffed with fish and shrimp, seared just enough to get a little smoky, and then finished with sea urchin, because indulgence is the point. The Aragosta e Midollo pairs grilled lobster with bone marrow and a citrusy tartare. Pasta is handmade daily, with a 30-year-old starter from Italy worked into the bread, because of course it is.
A cocktail program is coming, so for now it’s all about the 130-label wine program. But soon, Roman bartender Cristian Novelli will roll out a lineup of classic Italian cocktails and flights designed to take you on a boozy tour of Italy.
Novatore’s design leans into modern Roman grandeur—walnut furniture, arched mirrors, lime-washed walls—but the real focus is the food. If you want to eat like a Roman but prefer your view to be of Wynwood’s street art, this might just be the spot.
Novatore Cucina & Bar is open for dinner Tuesday through Sunday, with weekend lunch from 11 a.m. to 3 p.m. Reservations are available on OpenTable.
